Gynura
Gynura procumbens
Gynura (kim thất, rau lúi) is a sprawling, many-branched herb of the daisy family whose very smooth stems look almost succulent. The short-stalked leaves are its signature: three to eight centimetres long, oval with a rounded base, a pointed tip and small teeth at the edge, fleshy, so deep a green above that they read as black, and red-purple beneath, hence the name thiên hắc địa hồng, black above and red below. Orange-yellow flower heads open in loose clusters. The plant is grown and runs wild all over Vietnam, north to south, hills and lowlands alike, and is used fresh, in many places simmered in canh as a leaf vegetable.
