Kaffir Lime Leaves
Citrus hystrix
Kaffir lime leaves (Citrus hystrix) grow on a thorny citrus tree of two to ten metres, and have a rounded blade, rounded or notched at the tip, bluntly toothed along the edge, carried on a broadly winged stalk one to four centimetres across that can be as large as the blade itself, so each leaf looks like two joined end to end. The tree came originally from Mauritius and is grown through Southeast Asia, the Malay archipelago and the Philippines, and in Vietnam around Tịnh Biên in An Giang, including on núi Cấm, where it also bears knobbly green fruit that ripen yellow over very sour flesh.
