Perilla Extract
Perilla frutescens
Perilla (Perilla frutescens), tía tô in Vietnamese, is an annual herb of half a metre to a metre and a half, with an upright hairy stem and opposite, coarsely toothed oval leaves that are purple throughout, or green with purple-brown veins. Small white to pale mauve flowers stand in long spikes at the leaf axils. It is grown all over Vietnam from seed sown after the turn of spring, the older leaves picked from March or April, two or three times in all. Used as a kitchen herb, the leaf is dried in the shade or gently at low heat to hold its scent, which comes from perillaldehyde.
