Purslane

Portulaca oleracea

Purslane (Portulaca oleracea) is a low annual herb with fleshy, smooth, pale red stems 10 to 30 cm long and thick, glossy, stalkless leaves. Its Sino-Vietnamese name, mã xỉ hiện, means horse-tooth vegetable, after the shape of those leaves; in everyday Vietnamese it is rau sam. Yellow stalkless flowers sit at the branch tips. It is not cultivated in Vietnam; it grows wild in damp ground across the country, and the whole plant is gathered from May to July, washed, then used fresh or dried. In France it is grown as a salad vegetable, pourpier, and tastes pleasantly sour.
