Vietnamese Balm
Elsholtzia ciliata
Vietnamese balm (Elsholtzia ciliata, also written Elsholtzia cristata) is a small upright herb of the mint family, 30 to 45cm tall, with a smooth stem, opposite tapering leaves 5 to 8cm long and about 3cm across with toothed edges, and dense spikes of tiny stalkless pale-purple flowers at the ends of the branches. This is the plant Vietnamese gardeners grow under the name kinh giới, raised to be eaten as a seasoning; the Chinese herb of the same name, Schizonepeta tenuifolia, has never been found growing in Vietnam. Plants are lifted whole in autumn and dried in the sun or by gentle heat.
