Cynara scolymus
The artichoke (Cynara scolymus) is a tall, spiny plant of the daisy family, standing a metre or more — sometimes over two — with white woolly down on its stems and on its deeply cut, prickly leaves. The flower head is a pale purple thistle-head closed in thick, sharp-pointed bracts, and it is the fleshy base of each bract, with the receptacle beneath, that is eaten. The plant is not native to Vietnam: it was introduced and is now grown chiefly in the highlands at Đà Lạt, Sapa and Tam Đảo, though it will also grow in the lowlands.
