Butterfly Pea Flower
Clitoria ternatea
Butterfly pea flower comes from Clitoria ternatea, a perennial climbing vine in the pea family, cultivated across tropical Asia, including Vietnam, for its deep blue flowers. The flower is picked and dried, then steeped whole to brew an infusion that turns the water a bright blue, shifting toward purple with a squeeze of lime or lemon. On its own the dried flower has little scent and only a mild, faintly earthy taste, so cooks also use it to tint rice, drinks, and desserts.
