Dried Longan
Dimocarpus longan
Dried longan (Dimocarpus longan) is the white flesh, or aril, that wraps the seed of the longan fruit. The tree stands five to seven metres, with rough grey bark, evergreen foliage and pinnate leaves of five to nine narrow leaflets, fruiting in July and August. Longan grows all over Vietnam, the most prized coming from Hưng Yên, and also in southern China, Thailand and eastern India. Whole bunches are dipped in boiling water, dried by sun and oven for a day and a half until the fruit rattles, then peeled and stoned and the flesh dried again below 60°C. It is sweet, eaten as it is or simmered in water.
