Citrus maxima
The pomelo (Citrus maxima) is a big citrus tree of 10 to 13 metres with pale yellow bark, long sharp spines on its branches and leathery oval leaves whose stalks carry broad wings. Its flowers are large and very fragrant, opening in clusters of six to ten from March to May. It is grown all over Vietnam, most famously at Đoan Hùng in Phú Thọ and, in the south, as Năm Roi, mainly for the fruit; but the blossom is gathered too, to perfume food and cakes or to be distilled into nước hoa bưởi, the flower water sold in baking shops.
