Green Tea
Camellia sinensis
Tea (Camellia sinensis) is a hardy evergreen shrub. Left unpruned it can reach ten metres, with a trunk too thick for a man to get his arms round, and it sometimes stands in groves high on rocky mountains; under cultivation it is cut back to about two metres so pickers can reach it. Tea came first from China and is now grown widely in Vietnam: most in Phú Thọ, then Tuyên Quang, Hà Giang and Thái Nguyên, and in the south in Lâm Đồng and Đắk Lắk. Buds and young leaves are picked in spring, rolled, and pan-fired dry rather than fermented; their tannin gives the liquor its astringency.
