Lotus Embryo
Nelumbo nucifera
Lotus embryo, tâm sen, is the plumule taken from the seed of Nelumbo nucifera, a water plant whose cylindrical rhizome runs in pond mud and whose shield-shaped leaves rise clear of the water beside large white or pink flowers. Lotus is grown in many parts of Vietnam, to eat and for herbal use, and gathered from July to September. The seeds sit in a flared, upturned receptacle called gương sen; inside each one the plumule is made of four young leaves folded inwards. It is lifted out and dried in the sun or by gentle heat. Among its alkaloids is nelumbin, a white compound with a markedly bitter taste.
