Shan Tuyet Ancient Tea
Camellia sinensis var. assamica
Shan Tuyết tea is picked from Camellia sinensis left to grow uncut. In that state the tea plant is a vigorous evergreen that can reach ten metres or more, with a trunk too thick for a person to get their arms around, and it sometimes forms stands of woodland high on rocky mountains; on plantations it is instead cut back to about two metres for easy picking. Vietnam's tea provinces include Hà Giang, Tuyên Quang, Phú Thọ and Thái Nguyên. Buds and young leaves are picked in spring, rolled, then dried in a pan.
