Tamarind
Tamarindus indica
Tamarind (Tamarindus indica) is a large tree, 15 to 30 metres tall, with a very broad crown and dense, feathery leaves made up of ten to twenty pairs of small leaflets. Thought to have come originally from tropical Africa, it is now planted throughout Vietnam, often as a shade tree in the towns, and stands almost as woodland in places such as Điện Biên. The pods ripen in October and November: thin, brittle, reddish-brown shells over a fibrous, fleshy pulp, which is crushed and strained free of fibre and seed. The pulp is sour, from citric and tartaric acids, with a sugary edge.
