Winter Melon Tea
Benincasa hispida
Winter melon (Benincasa hispida) is an annual climbing vine of the gourd family, trailing as far as five metres, shaggy with long hairs, its heart-shaped leaves cut into five palmate lobes and its tendrils usually branched. The yellow male and female flowers are borne separately, and the fruit is long and heavy, three to five kilos, bristly while young and dusted with a waxy bloom over grey-green skin as it ages, packed with flat seeds. Native to India, it is now grown almost everywhere in Vietnam. Ripe fruit is cut for its flesh, rind and seeds, boiled, stir-fried, simmered in soup or candied.
