Achyranthes
Achyranthes bidentata
Achyranthes (Achyranthes bidentata) is a slender herb of the amaranth family, its faintly four-angled stems usually reaching about a metre and sometimes two, with opposite, stalked, ovate leaves 5 to 12 centimetres long and small flowers in spikes at the leaf axils and shoot tips. The root is what is used: dug up, washed clean and dried in the sun or by heat. In Vietnam the plant grown for it is a strain introduced from China, which roots more thickly than the wild cỏ xước found all over the country. Its Vietnamese name, ngưu tất, means ox knee.
