Dioscorea persimilis
Chinese yam (Dioscorea persimilis), củ mài in Vietnamese, is a twining vine with a smooth, faintly angled stem that carries small tubercles in its leaf axils and, below ground, a tuber up to a metre long and 2-10cm thick. Its heart-based leaves are 8-10cm long, and male and female flowers grow on separate plants. It grows wild in the forested hills of Vietnam, most abundantly in Lào Cai, Yên Bái, Thanh Hóa, Nghệ An and Quảng Bình, and is now planted too. The tuber, long dug for food between harvests, is lifted from autumn to early spring, peeled and dried, rolled smooth and dried again as hoài sơn.
