Lion's Mane
Hericium erinaceus
Lion's mane (Hericium erinaceus) is a fungus, fruiting in rounded to oval heads hung with dense, downward-trailing spines that recall a monkey's head; young bodies are white to ivory, and as they age the spines lengthen and turn yellow, closer to a lion's mane. It is a temperate species of cool, damp places, growing singly or in clumps on rotting wood, on stacked logs and in moist forest. In Vietnam it has been recorded in Vĩnh Phúc and Quảng Ninh, and is grown in Ho Chi Minh City, where it grows steadily at 30-33°C. The white-fleshed fruiting body is the part gathered, edible and softly fragrant.
