Stephania rotunda
Stephania tuber (Stephania rotunda) is a climbing vine whose stem swells at the base into one great tuber, dark brown and rough-skinned like a stone, gripping the rock of limestone hills; the largest weigh over twenty kilograms, while tubers formed in earth stay smaller. Slender, soft green stems rise from it, carrying alternate shield-shaped leaves, round to oval or heart-shaped, eight to nine centimetres across. It favours limestone country in Hà Tây, Hòa Bình, Hà Giang, Tuyên Quang, Ninh Bình, Cao Bằng and Lạng Sơn, and grows as high and cold as Sa Pa. Dug at any season, the tuber is scraped of its black skin, sliced thin and dried.
