White Fo-ti
Streptocaulon juventas
White fo-ti (Streptocaulon juventas) is a climbing vine two to five metres long, its reddish stems and paired, pointed leaves so thickly furred that the plant looks mildewed. Break any part of it and a white, milky latex runs. The flowers are pale brown to purplish-yellow, and the seed pods splay apart like a pair of ox horns. It grows wild on Vietnam's bare hills, favouring the hard soils of Vĩnh Phúc, Hà Tây, Hà Giang, Tuyên Quang, Cao Bằng and Lạng Sơn. The long, white, fleshy root, which looks like cassava but tastes bitter, is dug at any season, best in winter or early spring, sliced thin and sun-dried.
