Beta vulgaris
Beetroot (Beta vulgaris) is a robust, usually biennial herb, its long-stalked leaves rising in a basal rosette above the part that is eaten: a swollen hypocotyl and root, globular, flattened or tapering, whose flesh is ringed with alternating layers of deep-coloured and paler tissue. Wild forms grow along Mediterranean shores, and the crop, taken into cultivation in the eastern Mediterranean or Middle East, is now raised worldwide; in the tropics an elevation of 600-1,000 metres is the minimum for a profitable crop. Full-size roots are lifted three to four months after sowing. Boiled, pickled, or dressed cold with oil and vinegar, they carry a distinctly earthy smell, from geosmin.
