Cocos nucifera
The coconut palm (Cocos nucifera) is a solitary tree with a straight, smooth trunk scarred by fallen leaf sheaths and a crown of large feathered leaves. It has been planted since ancient times in tropical countries near the sea, and in Vietnam grows mainly in the south, around Bến Tre, Vĩnh Long, Mỹ Tho and Sóc Trăng, and along the central coast. The part used is the white flesh lining the nut, sun-dried to copra; a thousand nuts give some 300 to 400kg fresh, 170 to 180kg dried. Pressed, it yields a fat that is almost odourless and bland on the tongue.
