Curcuma longa
Turmeric (Curcuma longa) is a rhizomatous herb of the ginger family, 60cm to a metre tall, with oval leaves pointed at both ends, up to 45cm long, and a loose cone of pale green and lilac bracts pushing up between them. It is grown all over Vietnam as a kitchen spice, and across India, Indonesia, Laos, Cambodia and China. The rhizome is lifted in autumn, a cylinder, sometimes slightly flattened, deep orange-yellow where it is snapped or cut, then steamed for six to twelve hours, drained and dried in the sun or a drier. It carries a fragrant pale-yellow essential oil and curcumin, the pigment that colours it.
