Platostoma palustre
Grass jelly (Platostoma palustre, formerly Mesona chinensis) is a small plant of the mint family, 40 to 60 centimetres tall, its paired leaves hairy on both faces and toothed at the edges, and its flowers pale pink. It grows wild and is widely cultivated around Châu Đốc in An Giang, cut almost the year round but chiefly through the rainy season. The whole plant above the root is taken. Ground to a powder, boiled hard and strained, then thickened with a little tapioca or rice flour, it sets as a soft black jelly, thạch đen, sliced and served in sugar syrup with a drop of scented essence.
