Green Banana Powder
Musa
Green banana comes from the banana plant (Musa), which is not a tree: from a stout rhizome rise very large leaves, their blades up to two metres long and their sheaths wrapped into a false trunk three to four metres high. At flowering, a true stem pushes up through it and emerges bearing a spike sheathed in purple-red bracts, about twenty flowers to a bract. Native to Sri Lanka and Southeast Asia, it is widely grown for its fruit, which can be cut all year. The fruit is picked unripe, while it still carries tannin rather than sugar, then dried at low heat and milled to a powder.
