Lotus Root Powder
Nelumbo nucifera
Lotus (Nelumbo nucifera) is an aquatic plant that roots in the mud beneath still water, sending up long, prickly stalks that lift shield-shaped leaves 60 to 70cm across well clear of the surface, and large flowers of white or pinkish red. Buried in that mud is the part eaten: a cylindrical rhizome, called ngó sen in Vietnamese, which runs through the bed and is dug out. Lotus is grown across Vietnam for the table and for herbal use, and the plant is gathered between July and September.
