Citrus maxima

Pomelo blossom comes from Citrus maxima, a large citrus tree of ten to thirteen metres with pale yellow bark, long sharp spines on the branches and leathery leaves whose stalks carry wide wings. It flowers from March to May, the big blossoms borne in clusters of six to ten and intensely fragrant. Pomelo is grown all over Vietnam, most famously at Đoan Hùng in Phú Thọ province and, in the south, as the Năm roi variety. Leaves, flowers and peel all hold essential oil, and the flowers are gathered to scent food and cakes or distilled into pomelo-flower water.
