Ipomoea batatas

Purple sweet potato is a variety of Ipomoea batatas, a perennial creeper of the bindweed family whose stems trail two to three metres over the ground, its long-stalked leaves usually heart-shaped and cut into three lobes, its pale purple or white flowers borne in loose clusters at the shoot tips; fruit and seed are rarely seen. The part eaten is the root, which swells into a tuber. The plant is grown across the tropics for tubers taken in place of rice, and the flesh is starchy, about a quarter starch, with a few per cent glucose behind its sweetness.
