Red Dragon Fruit Powder
Selenicereus costaricensis
Red dragon fruit comes from a climbing cactus of the genus Hylocereus. In Vietnam the crop is grown as thanh long, Hylocereus undatus: green stems trailing up to ten metres, gripping their supports with aerial roots, three-ribbed, the ribs scalloped and horny along the edges, with only a few short spines. Growers train it up posts set three metres apart, mostly in Bình Thuận and Ninh Thuận, where fruit ripens in June and July. The large white flowers last one night; twenty-five days later the fruit is ripe — red-skinned, thick-rinded, still carrying the remains of the flower, juicy and sweet, with many black seeds smaller than sesame.
