Black Turmeric / Zedoary
Curcuma zedoaria
Black turmeric or zedoary (Curcuma zedoaria), known in Vietnam as nghệ đen or ngải tím, is a stout herb of the ginger family standing one to one and a half metres, with sheathing leaves 30 to 60 centimetres long blotched with red along the midrib and yellow flowers on a horizontal spike that usually rises before the leaves. The part taken is the rhizome, a pale-skinned, ridged, cone-shaped rootstock spreading into a palmate fan of tubers. It grows wild and is cultivated in Vietnam, lifted in winter, trimmed of rootlets, steamed and dried, sometimes sliced thin, sometimes simmered in vinegar first. Its oil smells and tastes close to camphor.
