Coriander Seed
Coriandrum sativum
Coriander (Coriandrum sativum) is an annual herb of the umbellifer family, 35-50cm tall on a smooth branching stem, its lower leaves broad and round-toothed, the upper ones cut into fine thread-like segments; crushed, the whole plant is fragrant. What is called coriander seed is really the ripe fruit, a nearly round ribbed body 2.5-4mm across that splits into two halves. Whole umbels are cut as they ripen, sun-dried, then beaten to free the fruit. Drying changes the smell: rank when fresh, pleasantly aromatic once dry. Vietnam grows the plant mostly for its leaves; the Mediterranean countries, Central Asia, India and China grow it for the fruit.
