Lemongrass
Cymbopogon citratus
Lemongrass (Cymbopogon citratus) is a tall, clump-forming tropical grass grown in Vietnam and across Southeast Asia, its narrow blue-green leaves arching up from a fibrous, pale stalk at the plant's base. It is that stalk cooks reach for: bruised and simmered whole in soups, curries, and broths, then lifted out before serving, or sliced thin for marinades, stir-fries, and infused teas. The scent is bright and citrusy, close to lemon peel but grassier, with a clean, sharp taste and a faint floral edge.
