Nutmeg
Myristica fragrans
Nutmeg (Myristica fragrans) is an evergreen tree, 8-10m tall, with leathery leaves and small yellow-white flowers. It is grown in southern Vietnam and Cambodia, and also in Indonesia, Malaysia and the West Indies. The yellow fruit, 5-8cm across, splits lengthwise in two when ripe, revealing one hard-shelled seed in a torn pink aril, the mace. Trees begin bearing in their seventh year, and fruit is taken twice a year. The husk is stripped, the aril salted and dried, and the stone dried at gentle heat until the kernel rattles inside, then cracked out and dried again. The kernel holds 8-15% of a fragrant, sharply pungent oil.
