Piper nigrum
Red pepper is the coloured fruit of Piper nigrum, from a climbing vine that grips its support with roots, its leaves like betel but longer, its fruiting spikes opposite them, twenty to thirty berries apiece. A berry starts green and turns red as it matures, yellow when ripe; red pepper is left on the vine to that red stage, not picked green. The skin stays on, and with it the oil held in the fruit wall and the chavicine that gives pepper its sharpness. The vine is grown across southern Vietnam, Hà Tiên, Phú Quốc, Bà Rịa and Quảng Trị, and more recently at Vĩnh Linh in the north.
