Allium cepa Aggregatum Group

Shallot (Allium cepa cv. group Aggregatum) is a biennial onion relative, usually grown as an annual from bulbs and up to 50 cm tall, with hollow, cylindrical, glaucous leaves, light to dark green, rising from swollen leaf bases. Instead of one bulb it forms a cluster of three to eighteen, each up to 5 cm across and wrapped in purplish, brownish or white bulbcoats. It is an important crop through the tropical lowlands of South-East Asia. The bulbs are eaten raw and sliced with roasted meat, ground with other ingredients into a seasoning paste for meat or fish, and used for pickling, cooking and frying.
