Star Anise
Illicium verum
Star anise (Illicium verum) is a medium-sized evergreen tree native to southwest China and northeast Vietnam, where it is still grown today. The plant produces a distinctive star-shaped fruit, picked while still green and dried in the sun until it turns a deep reddish-brown. Whole or ground, the dried fruit flavours Vietnamese phở broth and Chinese five-spice blends, and it is steeped in teas and mulled wine. Its aroma is sweet, with a pronounced licorice note and a faint woody spiciness.
