Zerumbet Ginger
Zingiber zerumbet
Zerumbet ginger (Zingiber zerumbet), known in Vietnam as gừng gió and also as riềng dại or ngải xanh, is a herb of the ginger family standing 1 to 1.3 metres tall, its close-set leaves almost stalkless, dark green above and paler beneath, with yellow flowers borne on a separate scaly stalk 30 to 60cm high. It grows wild throughout Vietnam, and in India, Indonesia and Malaysia. The part taken is the branching rhizome, pale outside and pale yellow within, dug in autumn, washed and dried in the sun or over heat. It is fragrant, and bitter to taste.
