Curcuma longa
Turmeric (Curcuma longa) is a tropical perennial of the ginger family, cultivated across South and Southeast Asia, including Vietnam, for its thick, branched underground rhizome. The fresh root has smooth, deep orange flesh and a sharp, earthy smell similar to fresh ginger; it is peeled and grated into curries, dals, and broths. Dried and ground to a fine golden powder, the root turns more concentrated and slightly bitter, with a peppery edge, and colours curry blends, rice dishes, and spiced teas.
